Apple and raisin puffs

Apple and raisin turnovers – makes 4

If like me you have apples growing in your garden then why not use some to make some delicious Apple Puffs? You can make them with apples and raisins as per this recipe or with other fruit, like apple and banana or apple and papaya, either way I am sure you will enjoy them.  I cant believe how big the apples are this year 14 inches in diameter and some even bigger but I must admit that we have had a good combination of sunshine and rain this year.



3-4 medium apple

(either cooking or eating apples will do but if you use eating apple then use less sugar as eating apples are generally sweeter)

1 tsp cinnamon

1 tsp ground ginger

2 tlb spoons raisins (i like to use gin soaked raisins)

Icing sugar to dust

egg to glaze

500g puff pastry or 1 pack if using pre-mixed

Knob of butter

Preheat the oven to 200c.

Remove peel and core from apples and cut into cubes before gently frying in butter, just until the apples slightly soften (do not overcook as the apples will turn into mush). Next remove apples from the pan and allow cooling before adding the raisins and cinnamon

Roll out your pastry onto a floured surface and cut into four equal squares

Place the apple filling over one side of the each triangle from corner to corner, leaving a small boarder around the edges for the fold. Fold the corner without the filling corner to corner.triangle puff

Press around the edges with either your finger of a spoon handle to seal the edges.

Brush with a beaten egg to glaze.

 Cook for 25 minutes, until golden and puffed

Remove from oven and allow cooling before dusting with icing sugar

Finally melt some cooking chocolate and drizzle over each puff
